BBQ Butterflied Organic Chicken with Salmoriglio
This delicious recipe with an Italian heritage, uses Bostocks free range organic chicken and is a wonderful break away from the “traditional BBQ theme" this summer.
This summer favourite is one to savour with your friends and family and is relatively quick and easy to prepare.
The name Salmoriglio comes from the southern Italian condiment of the same name.
Using our Bostock's organic chicken will be a real talking point with the taste, texture and obvious health benefits making the difference.
- 1 organic chicken size #14
- 1/4 cup of extra virgin olive oil
- 1 tbsp rosemary
- 1 garlic clove, finely chopped
- 2 Organic Lemons
- 1 garlic clove, crushed
- 2 bunches oregano
01 - Butterfly the chicken and place in a plastic bag with olive oil, rosemary and garlic. Season well, seal, then massage the chicken through the bag to coat well. Refrigerate all to marinate (at least 2 hours or overnight). Bring to room temperature an hour before cooking.
02 - Heat a barbecue to medium-high heat and grill chicken, turning often, until golden and the juices run clear when the thigh is pierced with a skewer (20-25 minutes).
03 - For the "Salmoriglio", pound garlic and a pinch of salt to a paste with a mortar and pestle. Add oregano, pound to a paste, then stir in olive oil and lemon juice and season to taste. Serve with chicken and lemon halves on the side.
